Easy win for Valentine's at home with a newborn
It's not always easy to make time for date night with your partner, even more so when there is a newborn in the mix! So we turned to one of our favourite chefs, Donal Skehan for a one-pot wonder to offer an easy win for a romantic Valentine's Day at home with your partner and your newborn.
This lovely dish will become a staple go-to for a quick home cooked meal. These measurements will serve 4, so there'll be leftovers for the following day too.

A truly one-pot meal, this Slow Cooker Butter Chicken couldn't be easier! Just throw all the ingredients into the slow cooker, turn up the heat and forget about it until dinner time! You'll have juicy chicken and a flavoursome curry every time you make it!
Here is the recipe:⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
8 skinless chicken thighs⠀⠀⠀⠀⠀⠀⠀⠀⠀
25g butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
500g potatoes, peeled and halved⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 onion, finely chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 large thumb sized piece of ginger, finely grated⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 garlic cloves, crushed ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp garam masala⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tsp ground coriander⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 green cardamom pods, crushed⠀⠀⠀⠀⠀⠀⠀⠀⠀
750ml tomato passata ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 x 400g tin coconut milk
⠀⠀⠀⠀⠀⠀⠀⠀⠀
To serve: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Naan or paratha bread⠀⠀⠀⠀⠀⠀⠀⠀⠀
100g mango chutney, to serve ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Large handful coriander ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1) Put the chicken along with all other ingredients for the chicken, into the slow cooker set to high, stir to mix everything together. Cover with the lid and cook on low for 4-6 hours until the chicken is tender.⠀⠀⠀
Optional: For more flavour, sautee onions and spices with a little butter before you put in the slow cooker.⠀⠀⠀⠀⠀⠀
2) At this point you can shred the meat off the bones if you like, or leave on. Discard the cardamom pods. Serve in bowls with naan, mango chutney and fresh coriander.
